BASMATI RICE PAYASAM

INGREDIENTS

½ CUP AkSHITA MOGRA BASMATI RICE, SOAKED FOR 2 HOURS

1 LITRE FULL CREAM MILK

6-8 SAFFRON THREADS

10-12 CASHEWNUTS, CHOPPED

2 TSPS RAISINS

½ CUP SEEDED AND CHOPPED DATES

¼ CUP WHITE / BROWN SUGAR (AS PER CHOICE)

10 PISTACHIOS

INSTRUCTIONS

  1. HEAT MILK IN A DEEP NONSTICK PAN. WASH AND DRAIN AkSHITA MOGRA BASMATI RICE, AND SUGAR BASMATI RICE TOGTHER, ADD THIS TO THE MILK AND COOK TILL RICE IS ALMOST DONE.
  2. ADD SAFFRON AND MIX AND CONTINUE TO COOK. ADD CASHEWNUTS, RAISINS, DATES AND COOK TILL EVERYTHING BLENDS WELL.
  3. ADD A LITTLE MILK IF THE MIXTURE IS TOO THICK AND COOK TILL RICE IS COMPLETELY DONE. ADD A LITTLE MORE SUGAR AS PER YOUR TASTE BUDS IF YOU WANT THE PAYASAM SWEETER.
  4. GARNISH WITH PISTACHIOS AND SERVE WARM.
